Colby Cheese made from goat milk

I made this on August 23rd so it has aged for a little over 3 months.  It is perfect.  Just the right moisture content.  Great with some wheat crackers and a glass of chilled wine.  Too bad we don't have any fresh fruit in the house.

    1. Thanks DFW! If you could only have one book when you have goat's milk make sure it is "Goat's Produce Too" by Mary Jane Toth. I was using a regular cheese making book to make some of my cheeses but this book made all the difference. It has recipes other than cheese. I've made the puddings, cajeta, yogurt and many more. I am going to tackle soap making next!

    2. I will check out that book! I hope you like my soap, I actually prefer the plain ol' white one over the fancy oatmeal one, but my husband thinks if I want to ever sell soap it needs to appeal to the "not so simple people" When you make your milk soap, I have found that doing the recipe with half milk and half water to mix with the lye makes the bar lasts longer. But I'm no expert I've only made a few batches ☺

  2. Looks delicious, hope you and your family had a great Thanksgiving. My computer has been so slow lately (using dial up connections) that I don't always hang on long enough to leave comments. Enjoy the cheese.

    1. Thanks TL... We had a wonderful Thanksgiving. I hope you and your family did as well! I know all about dial up...We now have wildblue which is a lot better but a lot more expensive. Cheese was yummy!

    1. Kelly... I was right proud of the way the Colby turned out. My first cheddar I opened a few months ago was a little dry but this one was just right!.. If you don't have the book Goat's Produce Too by Mary Jane Toth...get it. It is very helpful with goat milk recipes. Wish we all lived closer...We could take turns stirring!

  4. to heck with the fruit - who needs fruit when you got great wine, great cheese and crackers!!!! heck - i'd be happy with just the cheese - bahahahahahah! oh it looks like a fine snack was had by all...but i am a red-wine person. no offense. bahahahahahahahah!

    1. kymber....I was thinking some grapes or fresh strawberries would have really been yummy but it is the wrong time of the year as I do grow both!

      The white wine was already opened but we will soon drink more red. Papa Bears cholesterol is a little high. Our nurse practitioner said for him to enjoy a glass of red in the evenings along with the vitamins he takes to help lower it. I am in search of a good red we both will like.

    2. Mamma - my current fave of red wine is Lindeman's bin 50 shiraz. it is australian. prior to that, i used to love wolf blass shiraz, another australian wine. but we got too many bad bottles which is why i switched to Lindeman's. haven't had a single bad bottle of Lindeman's....teehee!

    3. you mean its not "framboise" your name sake? hahaha. Is raspberry beer or wine considered a red? The next time I am looking at wine I am going to try and find Framboise...that is if it's under 20 bucks....I am a thrifty mamma you know!

      Seriously....I will look for Lindemans and give it a try. I bought some with a name I can't pronounce...It is so french but made in California. We haven't opened it yet...I will give a report when we do.
